What's your favorite fish to cook/eat and how do you make it?

I've been eating tons of fish lately and need some ideas.

Flathead fillets pan fried with lemon pepper is probably th best shit ever.

I might not be a huge cook, but I do like fishing.

We also buy some vendace from a local fisherman, add some salt, roll in flours and fry on a pan.

pan seared on the outside only (blackeneded)
hot pan with olive oil and sear for maybe 10 seconds max

I like salmon/sea bass --> either lightly pan fried and then grilled, or made into fish cakes with a dipping sauce.
Cod --> Home made batter or home made breaded (serve with cheesy wedges - yum), or home made fish finger sandwiches (as in self battered) = amazeballs, and reasonably healthy.
Tuna/Swordfish Steaks --> grilled.
Paella (though I prefer a meat paella)

With good fish I don't think you need to do too much - let the fish talk!

Favourite dish I have made to date is ginger, chilli and lime salmon with some light noodles and veg (bit of soy/red wine fried off in the pan before cooking to flavour).

Can get a cheap fish and make into fish pie/stew/italian tomato dish but it is not my cup of tea. That having been said, I have never tried making the classic french fish stews. Keep seeing them on masterchef ... one day.

Baked snapper.
In olive oil and lemon juice, garlic, ginger, shallots, capers and lemon grass.
1. Put snapper in a small baking disk.
2. Put all the ingredients in it.
3. Cover it in foil.
4. Cook for 25mins on a preheated oven at 160.

Yes the 15 year old can cook.

Salmon steaks in a pan Lemon, pepper, and of course garlic. Cover with foil. Cook for 15 minutes or so at 450. can use broiler too
Oh yeah take foil off for last 5.

Well, not so much. I just hate it because of the fishbone. I can only eat fish fillet. The wife rolls it up in flour and fry's it 'til it's golden brown. Eat it with steamed white (or red fried) rice and some tomato chile.

I keep forgetting about the dinner pic thread I made.

I hate fish, except tuna sandwiches. With lots of mayo(pretty much kills the taste of the fish anyway:p)

But I like seafood. But only crab and shrimp really. Lobster and clams and that kind of stuff is just nasty.

Eel Ngiri is delicious.

At traditional sushi places, there will already be wasabi under the fish, and the soy sauce is already on there. It is wonderful.

But most other sushi isn't.


Very good sushi is still tuna. But it's a leaner cut very hard to find in regular sushi places:
