I just discovered this stuff and it's like crack. I made two cups of it today and ate it all (that's a lot)
This is the recipe i used but you can add anything you want to it.
2 cups tri color quinoa (get it from the bins to save $$)
4 (used a little over) cups of water
2 chicken bullion cubes
1 smashed garlic clove
Bring that all to a boil. Pour in the Quinoa, cover and simmer over lowish heat until done (water gone) Same as making rice. Took about 12 minutes for mine.
Put it aside and let it cool for 15 mins or so.
Once the Quinoa cools down a bit, add all the stuff and stir it up. Then slowly pour in the dressing and keep stirring until it's all mixed. You can eat it right away but it's better cold imo. Not only healthy, but very filling.
Dressing:
1/3 cup Honey
1/2 cup Olive or Vegetable oil (i used Olive)
1/4 cup Lemon juice
1 tablespoon dijon mustard
Mix that really well. Best to put in a container, cover and shake after whisking.
What i put in:
One chopped up chicken breast (cook it first )
Diced green bell pepper (1)
Half chopped red onion
1/2 cup crumbled feta cheese
KamchatkaKalamata olives (diced)
Pinch of salt
Sun dried tomatoes
Artichoke hearts (1 can)
