Smoked this turkey today for a little over six hours over mesquite and apple wood. All i have to say is GOD DAMN!

You may now be jealous.

nice roast there buddy. geez can someone tell me any other fuel can be used in the grill cause sometimes i roast part chicken with charcoal, it can get burned very easily...

If you're burning your chicken obviously your fire is too hot. Are you cooking a whole chicken? Use less charcoal, get a thermometer like the one you see sticking out of my bird and monitor the grill temps. Also, cook over indirect heat.
 
Noob question bit why do you have to coo it for so long? Cooking over a fire is pretty similar to a BBQ oven, and it only takes like 2-3 hour. why does it takes 6 hours?
 
It doesn't take that long to actually cook, but almost all meat tastes better if cooked at a low temp for longer.
 
It does take that long. The reason it takes so long in a smoker is because of the low temp used. I stayed between 225-250 the whole time. There is no real set time for cooking a whole bird, you cook it to a specific internal temperature. If it was cooked in the oven it would probably take 2 1/2 - 3 hrs.
 
My dad owns a barbecue place so we can have smoked BBQ with beans and Cole slaw/potato salad whenever we want :3 we actually had smoked salmon last night
